As early as you can. Tickets are sold only online and are released six weeks ahead, and popular times go quickly.

Amsterdam's centre is compact, so the plan groups neighbours: day one follows the canals from the Anne Frank House through the Jordaan to the Dam, day two is the museum quarter with a market lunch in De Pijp, and day three is the old centre around the Jewish Quarter. Book the Anne Frank House, the Rijksmuseum and the Van Gogh Museum before you go.
